fastmail.fm, great site, very minimal and has lots of different packages to pick from

gmail all the way, i've been a fan of it since it came out; its very simple to use and other google features make it even better; i also have hotmail and yahoo accounts, they generally tend to be my spam emails since their layouts are more suited (in my opinion)
